She\u2019s the kind of person who peeks into the cupboard and takes a little of this and a little of that, and suddenly you\u2019re eating the best thing you\u2019ve tasted in years. (Are you an intuitive cook, too? I find it really fun to watch.)<\/p>\n<p>We now have a giant bowl of this couscous in our fridge, and I\u2019ve been having it every day for lunch. <a href=\"https:\/\/cupofjo.com\/tag\/toby-and-anton-in-conversation\/\" target=\"_blank\">The boys<\/a> love it, too. It is, as they say, infinitely riffable, so you can add whatever toppings you\u2019d like.<\/p>\n<p><strong>Mediterranean Couscous<\/strong><br \/>8 lunch servings<\/p>\n<p>extra virgin olive oil<br \/>16 oz <a href=\"https:\/\/www.instacart.com\/products\/16367768-riceselect-pearl-couscous-24-5-oz\" target=\"_blank\">pearl couscous<\/a><br \/><a href=\"https:\/\/www.instacart.com\/products\/69743-better-than-bouillon-premium-roasted-chicken-base-8-oz\" target=\"_blank\">Better Than Bouillon<\/a> (optional)<br \/>1 shallot<br \/>1 lemon<br \/>pint of cherry tomatoes<br \/>6 Persian cucumbers<br \/>2 red bell peppers<br \/>red onion<br \/>avocado<br \/>rotisserie or grilled chicken (optional, skip to make it vegan\/vegetarian)<br \/>fresh dill<br \/>dried oregano<br \/>pinch of cinnamon<br \/>salt and pepper, to taste<\/p>\n<p>Warm a bit of oil in a pot, then add the couscous, toasting the grain until lightly toasted. Add 2.5 cups of water and about 2 teaspoons of Better Than Bouillon (optional). Stir occasionally until water is absorbed and couscous is tender, adding more water as necessary. <\/p>\n<p>Meanwhile, thinly slice 1 shallot and place into a small bowl. Squeeze the juice of one lemon over shallot slices to marinate.<\/p>\n<p>Next, chop tomatoes, cucumbers, bell peppers, red onion, avocado, and chicken and put in a large mixing bowl. <\/p>\n<p>Once couscous is cooked, add to the large bowl of chopped veggies.
