In 20 minutes, I\u2019ll add evaporated milk and lower the heat, then wait again as it simmers. To make <a href=\"https:\/\/www.instagram.com\/zaynab_issa\/\" target=\"_blank\" rel=\"noopener\">Zaynab Issa\u2019s<\/a> Karak Chai, you\u2019re committing to patience and the payoff: a spicy, milky tea that warms you from head to toe. <\/p>\n<p>Chai means tea, any tea, but the Starbucks-ification of tea makes us immediately associate it with the milky, cardamom-enhanced version. \u201cI\u2019ve ordered my fair share,\u201d laughed Zaynab, whose gorgeous cookbook, <a href=\"https:\/\/www.oldfaithfulshop.com\/products\/third-culture-cooking-zaynab-issa\" target=\"_blank\" rel=\"noopener\">Third Culture Cooking<\/a>, is a playful blend of recipes that touch on her family\u2019s Khoja identity \u2014 a diaspora of Indians who migrated to East Africa, among other places \u2014 but also the fact that she grew up in New Jersey and worked in Bon App\u00e9tit\u2019s test kitchen.<\/p>\n<p data-article-image=\"1\" data-article-image-position=\"1\" data-article-image-position2=\"1\"><img decoding=\"async\" src=\"https:\/\/cupofjo.com\/wp-content\/uploads\/2025\/03\/Screenshot-2025-04-09-at-11.59.09%E2%80%AFAM.png\" alt=\"zaynab issa\" width=\"796\" height=\"726\" class=\"alignnone size-full wp-image-335896\" srcset=\"https:\/\/cupofjo.com\/wp-content\/uploads\/2025\/03\/Screenshot-2025-04-09-at-11.59.09\u202fAM.png 796w, https:\/\/cupofjo.com\/wp-content\/uploads\/2025\/03\/Screenshot-2025-04-09-at-11.59.09\u202fAM-530x483.png 530w, https:\/\/cupofjo.com\/wp-content\/uploads\/2025\/03\/Screenshot-2025-04-09-at-11.59.09\u202fAM-680x620.png 680w, https:\/\/cupofjo.com\/wp-content\/uploads\/2025\/03\/Screenshot-2025-04-09-at-11.59.09\u202fAM-768x700.png 768w\" sizes=\"(max-width: 796px) 100vw, 796px\"\/><\/p>\n<p>Zaynab describes \u201cthird culture cooking\u201d as a category that \u201chelps define a bunch of children of immigrants\u201d because her food isn\u2019t Khoja + American, it\u2019s all over the (delicious) place. There are Mall Cinnamon Rolls, <a href=\"https:\/\/www.instagram.com\/zaynab_issa\/p\/DIJb2AvRK6G\/\" target=\"_blank\" rel=\"noopener\">Samosa-Spiced Smashed Burgers<\/a>, and French Onion Ramen. The book\u2019s design will draw you into her beautiful world, and the Karak Chai will brighten your own.  <\/p>\n<p>\u201cThis chai is not casual,\u201d Zaynab told me. And neither is she. The author and <em>New York Times Cooking<\/em> <a href=\"https:\/\/cooking.nytimes.com\/search?q=Zaynab+Issa\" target=\"_blank\" rel=\"noopener\">contributor<\/a> is always <a href=\"https:\/\/www.instagram.com\/zaynab_issa\/p\/Ctzk0vpPpdh\/?img_index=1\" target=\"_blank\" rel=\"noopener\">impeccably dressed<\/a> (and in fact, we spoke after she\u2019d zipped out of a fashion show in New York, where she lives).<\/p>\n<p>The secret to making a tea-forward chai, Zaynab writes in her book, is to use a British black tea, like Tetley or PG Tips. Those stronger teas can take a half hour of steeping and come out fighting. (Lipton could never.) When Zaynab was a kid, they\u2019d visit family in Canada and stock up on Tetley, unboxing it into Ziploc bags and stuffing their luggage. But now it\u2019s more readily available \u2014 I found it at Meijer in Michigan. <\/p>\n<p>We talked about how, in a culture that doesn\u2019t drink alcohol, the nuance and ritual of tea hits some of those same notes. \u201cThere\u2019s intentionality\u201d to drinking chai, she said, in the same way you might open an aged bottle of bourbon. Often, her mom will put on the <a href=\"https:\/\/www.etsy.com\/listing\/1844365825\/vintage-pyrex-flameware-kettle-vintage?\" target=\"_blank\" rel=\"noopener\">Pyrex Flameware glass kettle<\/a> while they\u2019re still eating dinner, to get it started, and it\u2019ll simmer while the dishes are washed and the table cleared. This amount of sugar feels like the minimum for a pleasant drinking experience, but feel free to adjust it\u2026 or simply serve the tea with a bowl of sugar alongside with spoons for people to sweeten to their liking. Fair warning, someone will absolutely use the dry sugar spoon to mix their chai and return it to the now-clumpy sugar bowl. That\u2019s when I have to remind myself to breathe \u2014 it\u2019s all part of the experience. \u2013 Zaynab Issa<\/em><\/p>\n<p>4 Tetley brand tea bags or PG Tips, or 4 teaspoons black tea leaves<br \/>13 cardamom pods, cracked<br \/>3-inch cinnamon stick<br \/>3 tablespoons granulated sugar, plus more to taste (or cane or light brown sugar)<br \/>1 teaspoon vanilla extract, optional<br \/>1 cup (240 ml) evaporated milk <\/p>\n<p>Combine 6 cups (1.4 L) water, tea bags, cardamom, cinnamon, sugar, and vanilla in a stove-safe tea kettle or medium pot. Place over medium-high heat and bring to a boil. Stir in the evaporated milk and return to a boil, watching carefully to ensure the tea doesn\u2019t boil over \u2014 once the milk is introduced, boiling over is common at a rolling boil. Once just boiling, reduce the heat to medium-low and simmer until thick, creamy, and caramel in color, about 25 minutes. The longer the tea simmers, the stronger and creamier it will be, although it will also reduce in volume. Taste for desired sweetness and add more sugar to your taste. <\/p>\n<p>Strain the chai through a fine-mesh sieve into mugs; discard the spices and tea bags.
