When the onions were sliced too thin, they were almost nonexistent when everything was done cooking. Slowly caramelizing the onions is key! They create the irresistible gravy that soaks into the tender beef as it cooks low and slow. Let the oven do the work, and you\u2019ll be rewarded with an irresistible roast that\u2019s packed with savory goodness!<\/p>\n<ol class=\"wp-block-list is-style-fancy\">\n<li><strong>Season the Roast:<\/strong> Heat half of the\u00a0olive oil\u00a0in a large <a href=\"https:\/\/www.target.com\/p\/lodge-6qt-cast-iron-enamel-dutch-oven\/-\/A-14345909?preselect=10514667#lnk=sametab\" data-wpel-link=\"external\" target=\"_blank\" rel=\"noopener\">Dutch oven<\/a> over medium-high heat on the stovetop. Season the chuck roast\u00a0all over with\u00a0kosher salt and black pepper.<\/li>\n<li><strong>Sear on Each Side:<\/strong> Cook the roast for 3 minutes on each side to develop a browned crust. Remove the roast and then set aside on a plate.<\/li>\n<li><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\"><strong>Add Onions:<\/strong>\u00a0Reduce to medium heat<\/span>, then<span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\"> add the remaining olive oil along with the sliced onions to the Dutch oven. Cover and cook the onions, removing the lid to stir occasionally until tender and cooked down.<\/span> Remove the lid and cook for 15 more minutes, stirring occasionally until the onions are browned. While the onions cook, preheat the oven to 325 degrees Fahrenheit.<\/li>\n<li><strong>Add Seasonings:<\/strong> Add minced garlic, dried oregano,\u00a0dried thyme,\u00a0salt, and pepper, then cook for a couple of minutes.<\/li>\n<li><strong>Make the Sauce:<\/strong> <a href=\"https:\/\/www.target.com\/p\/9-stainless-steel-whisk-figmint\/-\/A-90064471?preselect=87689757#lnk=sametab\" data-wpel-link=\"external\" target=\"_blank\" rel=\"noopener\">Whisk <\/a>the all-purpose flour\u00a0into the onions, creating a paste, and slowly pour in the\u00a0beef broth, red wine, and\u00a0Worcestershire sauce.<\/li>\n<li><strong>Bake, Shred,<\/strong> and Serve: Add the roast back to the Dutch oven and spoon the gravy mixture over it.
