If you want a little texture in your sauce process until almost smooth leaving small pieces of tomato.\u00a0<\/span><\/span><\/p>\n<p><span style=\"font-size: 17px;\"><b>Pancetta:<\/b><span style=\"font-weight: 400;\"> Pancetta is an Italian cured pork belly that adds a salty meaty bite to this sauce. You can often find it in the deli department already diced which is what we want for this recipe. If you can\u2019t find pancetta, bacon would be a great substitute as would a smoky prosciutto. All you need is \u00bc cup, but you can bump it up to \u2153 of a cup for a more concentrated flavor. If you don\u2019t drink alcohol, you can eliminate the vodka altogether. Be sure to season the water with salt before you add the pasta to the boiling water. The rule is 1 tablespoon salt for every 4 quarts of pasta water.<\/span><\/p>\n<p><span style=\"font-size: 17px;\"><b>While the pasta water is boiling, get the sauce going.<\/b><\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">In a deep heavy-bottomed pan placed over medium-low heat, start by saut\u00e9ing the pancetta and onion with olive oil until the onion is softened and translucent and the pancetta is crispy. (5 minutes)<\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">Then add the garlic and crushed red pepper, give it a stir and let it cook with the onions until fragrant. (2 minutes)<\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">Now, turn up to medium and add the crushed tomatoes, the vodka and the salt and pepper. Simmer for about 5 minutes or until you can\u2019t smell the vodka rising from the sauce any longer. This allows all the alcohol to evaporate, leaving only flavor behind. (5 minutes)<\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">Turn the heat down to low and add the butter and cream, stirring well and cooking for another 3 minutes. If you\u2019re using olive oil instead of butter in this recipe, you don\u2019t need to add more at this step.<\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">The sauce is almost finished!\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; font-size: 17px;\">Turn the heat off and then stir in \u00bd cup of grated Parmesan cheese. Add 1\/4 cup of pasta water to the sauce and stir well. This will help the sauce stick to the pasta better.<\/p>\n<\/li>\n<li id=\"wprm-recipe-11243-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Toss the cooked pasta in the sauce to coat.<\/p>\n<\/li>\n<li id=\"wprm-recipe-11243-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">To Serve &#8211; After plating, garnish each pasta dish with more grated Parmesan cheese and fresh basil.
