The two cuts should form a T on the jalape\u00f1o. Keep the stem, but remove the seeds and veins. Repeat with the remaining jalapenos.<\/li>\n<li><strong>Make the Filling:<\/strong> Combine the cream cheese, brisket, pepper jack, and seasonings in a large bowl. Spoon the brisket mixture into the jalape\u00f1os until they are filled but are still able to close all the way.\u00a0<\/li>\n<li><strong>Wrap With Bacon:<\/strong> Wrap each jalape\u00f1o tightly with a slice of bacon.
