Spray with pan spray and set aside.<\/li>\n<li><strong>Whip Eggs:<\/strong> In a large bowl, use a hand mixer to whip the eggs for 2-3 minutes on high, until light and frothy.<\/li>\n<li><strong>Add Sugars:<\/strong> Beat in the brown sugar, granulated sugar, and vanilla. Fold in the shredded carrots.<\/li>\n<li><strong>Mix Dry Ingredients:<\/strong> Whisk the flour, cinnamon, ginger, nutmeg, baking powder, and salt in a medium bowl.<\/li>\n<li><strong>Combine Dry and Wet Ingredients:<\/strong> Add the dry ingredients to the wet and fold in by hand just until no streaks of white remain.<\/li>\n<li><strong>Bake:<\/strong> Pour the batter into the prepared pan and bake for 10-15 minutes, until the cake is fully baked in the center and a toothpick comes out clean. While the cake bakes lay out a clean kitchen towel and dust it with about \u00bc-\u2153 cup of powdered sugar.<\/li>\n<li><strong>Cool and Roll the Cake:<\/strong> Remove the cake from the oven and let it cool for 5 minutes before inverting onto the kitchen towel. Using the short side, roll the cake up tightly into the towel.
